I would *highly* recommend using an electrical oil temperature gauge because having hot, pressurized, flammable fluids running through the cabin is never a good idea.
I have my sender mounted in my ReSpeed oil pedestal. It comes with two 1/8" NPT ports for senders, although this may not be the best location for oil temp readings because you are reading from cooled oil out of the coolers. (disclaimer: I may be wrong about the oil flow direction)
I have also seen people mount senders in the banjo bolt at the oil filter pedestal, and in the oil pan bolt. I think egauges.com sells the oil pan bolt adapter so that you can mount a temp sender in it.
