Holley double-pumpers and Weber DCOEs are good candidates for blow-through. There's very little involved in boost-prepping a DCOE; as I understand it, use a neoprene float bowl gasket and teflon-tape anything threaded (save the idle mixture screws, obviously), and you're good to go. I hear Weber IDAs can be done without much trouble, either, but I don't know any specifics as to what's required.
The original site is down, but there's a writeup on boost-prepping a Holley here: http://web.archive.org/web/200805050.../blowthru.html Other than that, it's just a matter of building a carb hat and tuning it.
