It sends out 5v when the temp is at 990C/1800F, is that high enough to log?

The probes have operating temp from -100C to 1300C, so they should be good enough.
open tips do not last long term on rotaries, you need closed tips.

990 deg C is no where near high enough.

If you are using the power hard and often in 4th gear and 5th gear it will go over 1100deg C in regular basis.

My thread on Aquamist site talks extensively on the life of open tip probes, and also lots of information on temperatures logged on all kinds of tests too.
